In No Limit Hold'em you can do an all in bet at any time. Where as in limit of pot limit hold'em you can not. Sure, at some point in those games you will reach and all in point but you can't do it in the same manner as in No Limit Texas Hold'em. Also, when you're playing a game and are able to raise an undefined amount it really brings the best and worst in the players. It's easier to bluff and to get a read on your opponent. These are two of the main factors in playing winning poker. Why would you want to play a game in where these two key elements are reduced. It's fact that in No Limit Texas Hold'em you must be a better skilled player than in Limit or Pot Limit Hold'em. Many limit and pot limit games have calling machines that get lucky on the turn and river to beat their opponents. While this happens in No limit too it doesn't happen as often. Most of these fish get beat out consistently.
